Thai Salmon Fishcakes served with a Mushroom Stir Fry

My favourite cuisine changes daily (anyone else?) but I have to say that the flavours and ingredients I eat and use the most of would be that of Thai. I just love the complexity but ease of the flavours. Few simple ingredients in your pantry and your ready to make this along with most Thai and other asian dishes.

For the salmon fishcakes I blended a 50p piece of salmon and mixed in garlic, ginger, fish sauce, oyster sauce, soy sauce (used the little fish soy sauces that you get in the sushi packs which we had for lunch), grated carrot (picked out from a 10p mixed bag of veg) and some corriander stalks and all formed these into patties and fried for a few minutes on each side.⠀

These were served with a 20p reduced stir fry packet using the same spices and sauces as in the salmon fishcakes ⠀
