Sticky Pomegranate Salmon with Jasmine Rice and Pickled Cucumber

The sticky salmon is from #fress by @emmaspitzer and a favourite in this house. It is so simple and quick to do and absolutely delicious too!!! ⠀


Super tasty and super quick!!! ⠀


For the salmon mix a 1tsp each of cornflour and sumac with 2tsp brown sugar and a pinch of salt. Using this mix coat the fleshy side and cook flesh side down for about 2 mins. Flip and cook skin side down for another minute, adding pomegranate molasses to the flesh side with a pastry brush. ⠀

Finish in the oven for about 8 mins.⠀

I made some pickled cucumber by adding 1/2 cup of vinegar to the left over sumac mix above, adding in some sliced cucumber and topping with water till covered and leaving until needed. Served along with a packet of microwavable sticky jasmine rice. Topped with onions, both crispy and spring!Enjoy!!
