Sourdough Discard Pancakes

Ingredients 2 cups plain flour 2 tsp baking powder 2 tbsp granulated sugar 1 tsp salt 1 cup of sourdough starter 1 1/2 cup of milk 1 large egg 1tsp vanilla extract Method

  1. Whisk together the dry ingredients - flour, baking powder, sugar and salt

  2. Add in the wet ingredients - sourdough starter, milk, egg and vanilla and mix well until combined

  3. Spray a frying pan with cooking spray or grease well with butter and heat until the oil/butter is hot

  4. Pour 1/2 cup batter on the pan for each pancake and cook until it starts bubbling on top, then flip it over

  5. Cook for an additional 1-2 minutes or until the pancake is cooked through

  6. Serve with whatever toppings you like! I love to use whatever fruit and berries I have, but otherwise I love maple syrup, lemon juice and sugar.
