Seafood Paella

I love Paella, and in particular the traditional Spanish version especially my memories eating paella while making my way through a jug of sangria. I won't pretend that this is the same but it definitely reignites these memories and is such an easy way of recreating a paella style dish inspired by the authentic! The greatest thing about this type of dish for me too is that so many of the ingredients and interchangeable.

For example I used the reduced priced seafood that I had including Loungistines (£2.66), and cod Skewers (£1.50) but you can use absolutely anything meaning that you can make this delicious paella dish for a fraction of the cost. ⠀



Ingredients

3 Chicken sausages

100g Chorizo

Red onion

1tbsp garlic powder

1tbsp onion powder

1tbsp smoked paprika

1tbsp sweet paprika

1tbsp sumac

3-4 threads of saffron

1tsp turmeric

Glug of white wine

Juice and zest of a lemon plus extra for serving

2 packets of microwavable rice

1 tin of spelt

500ml stock made up with chicken stock cubes

Shellfish/fish (optional)




1, Cut sausages into 6 and roll into little balls before adding to a frying pan with chorizo and a chopped red onion⠀

2, Add in herbs / spices, I used a mixture of garlic, onion powder, smoked paprika, and sumac ⠀

3, After frying for 5 minutes I added in a glug of wine to deglaze the pan (any wine will do, I used some homemade nettle wine) and added another 1tsp garlic here after tasting along with seasoning and lemon zest⠀

4, Cooked 2 packets of rice on the microwave and added this straight into the pan along with a tin of spelt (optional, but bulks the amount out without using more rice) ⠀

5, Add in 500ml stock along with saffron and a little turmeric for colour more than flavour.⠀

6, Add shell fish and cod if using before covering with a lid. Leave for approximately 10 minutes until the stock is absorbed and your sea food is all cooked - may take a little longer or less depending on what seafood you are using. ⠀

7, Demolish

This took about 30 minutes to cook in total and was super delicious 😋
