I made a cheat shakshuka for brunch whereby I made the tomato base as normal with chorizo, onion, leeks and harissa paste, but instead of baking in the oven with eggs I fried an egg and topped it instead so that I could use the base sauce for tea too.⠀

I fried off mince and extra seasoning along with the base sauce from brunch to make this quick pasta bolognese ⠀

This probably shouldn't be referred to as a bolognese, and for this I apologise as it is a "chuck everything and anything into a pan" type of thing - and then add more garlic 😋 ⠀

Serve with a sprinkling of parmesan and fresh basil
