Lamb with a Balsamic Reduction, served with Lentils and Chickpeas, with roasted Broccolli and Bacon

The lamb was half price from morrisons or almost half price I should say. And a complete treat as at still £5 is way more than I would normally pay for any one item of food! But the world is ending and I had a moment of 'fudge it' 😍🤣 ⠀

It does remind me however how much I love lamb, especially when cooked perfectly of which this was. Still pink and falling off the bone!! It was really quick to cook also, just 3-4 minutes on each side and then left to rest for 15 under some foil.

For the balsamic glaze I added a chopped onion into the same pan I used to cook the lamb along with a cup of balsamic vinegar, a cup of chicken stock and reduced for about 10 minutes before pouring over the rested lamb 😋⠀
