Hashbrown Wrap

Hash browns are the greatest thing ever. Fact! If you disagree, let me change your mind with this recipe!

Turning them into a wrap was an obvious next step to take breakfast to another level. I took inspiration for this idea from a slimming recipe which was a hash brown pizza - also amazing!

Ingredients (for 2)

6 medium floury potatoes (like Maris Piper or King Edwards)

1 medium onion

1 egg

Onion granules

Smoked paprika

Seasoning


Method

1, Grate or shred potatoes into a tea towel or cheese cloth and then squeeze out the excess liquid by twisting the towel. When you think you've twisted enough, twist again for fun...

2, Add in seasoning to taste, an egg, a tbsp each of garlic granules, and smoked paprika, before mixing and frying flat in a pan, making them approximately 1cm/½in thick with some fry light or oil of your choice

3, Leave for approximately 4-5 minutes on a medium heat, then once browned and crisp flip it (carefully to keep it as one wrap) and cook for a further 5 minutes

4, Stuff the hash brown wrap with your breakfast greats - mine is a fried egg, beans, sausage, and fried tomatoes and wrap using a napkin or foil to help keep it together

6, Enjoy!!
