Hashbrown Breakfast Pizzas⠀

I'm not sure what else needs to be said here... its a hashbrown (best part of a breakfast) with breakfast toppings and cheese... coming in at around £1.20 for 2 using #whoopsie potatoes and cheese from @morrisons

1, For the hashbrown base I peeled and grated 4 large potatoes and squeezed out the liquid before adding in 2 eggs, a chopped leek, sweet paprika, garlic and onion granules along with salt and pepper. This made enough for 2 bases.⠀

2, Half your mix and tip out onto a baking tray lined with greaseproof paper and form into a circle (or whatever shape you want your pizza to be)⠀

3, Bake for 20 minutes or until golden around the edges on 180 degrees⠀

4, Once golden take the bases out of the oven and add chosen toppings. I opted for a tomato base (tomato puree, passatta and seasoning), sausage (cubed and cooked before hand) and cheese (a mix of light cheddar and mozzarella) ⠀

5, After 5 more minutes in the oven - until the cheese is melted I then topped with a fried egg and served with a garlic dip (made with yogurt) ⠀
