Crunchy Nut Cornflake Cake ⠀

Best dessert ever made even better with @kellogs_official Crunchy Nut Cornflakes and Homemade Flaky Pastry ⠀

1a, To make pastry yourself blitz 180g plain flour, 80g unsalted butter, until you have breadcrumbs. Add in 30ml cold water and blitz to form a dough. Bring this together, wrap in clingfilm and put in the fridge for at least an hour.

1b, Or take ready to roll pastry out of the fridge...

2, Roll out pastry to fit your tart tin and using a fork prick the bottom. Blind bake the case using greaseproof paper and filling with baking beans for approximately 15-20 mins in a preheated oven of 180 (like everything else) until just starting to brown around the edge. You can also take out the parchemnt and baking beans returning to the oven for 5 mins to help dry the pastry out too (I didn't do this)

3, While baking start on the filling. Melt together 50g butter, 125g golden syrup 25g light brown sugar.

4, Once melted add in approximate 125g crunchy nut cornflakes and make sure they are all coated.

5, When pastry case is ready and almost cooked take it out of the oven and add in a good few dollops of your favourite jam and spread before adding in the cornflake mixture and pressing it down

6, Return to the oven for approximately 5 - 10 more minutes before taking it out and allowing to cool slightly

7, Demolish, with or without custard
